Chicken and chorizo casserole

● 1kg Chicken Thighs ● 3 garlic cloves, chopped ● 200 g sliced chorizo ● 750 ml chicken stock ● 2 cans Butter Beans ● 2 oranges, quartered ● 4 sprigs rosemary ● 2 tbsp cornflour


1. Pre-heat the oven to 180C/160C Fan/Gas 3. Brown the chicken thighs for 3 minutes on each side and transfer to a casserole dish. 2. Fry the garlic and chorizo. Add to the dish with the chicken stock, beans, oranges and rosemary. Cover and cook for 1 hour 15 minutes. 3. Mix the cornflour with a little water and stir into the casserole to thicken. 4. Cook for a further 15 minutes.
